Lamb Kofta Burger with Minted Labneh

Break up your burger routine with this crowd pleasing simple Mediterranean stunner. Spiced ground lamb comes together quickly on a hot pan, with no need to light up the grill. The minted labneh, a strained Greek style yogurt, provides a cool touch.
Ingredients for Kofte Burger:
1 pound ground lamb
1 tsp. ground cumin
1 tsp. ground coriander
Pinch of cinnamon
¼ cup chopped flat leaf parsley
¼ cup sliced scallion or onion
2 tbsp. chopped fresh mint
1 scant tsp. salt
½ tsp. pepper
Place all kofte ingredients in a large bowl and gently mix until blended. Divide and shape into 4 balls

Ingredients for Minted Labneh:
2 cups labneh
2 tbsp. chopped fresh mint
1 tsp chopped fresh dill
½ -1 tsp chopped fresh garlic
1 tbsp. lemon juice
Pinch of salt and pepper
Mix Labneh ingredients in a medium bowl, keep in the fridge for up to 3 days.
Cooking Directions:
Heat a heavy pan on high heat. Once you place the patties down, lower heat to medium and time for about 3 minutes. Gently flip and go another 3 minutes for medium rare or a bit longer to your liking. Place kofte on the bottom of toasted buns, top with a dollop of labneh, and place the caps on top. Serve with extra sauce on the side.
