Sourdough Garlic Toast

Makes 2 Servings
When tomatoes are at the height of their season their flavor is unparalleled when compared to their less than loved out-of-season variety. Make every effort to venture out to your local farmers market for your tomatoes, you’ll be so glad you did!
Ingredients:
1 cup cherry tomatoes, sliced lengthwise
1 small garlic clove, chopped fine
1 tbsp. extra virgin olive oil
1tsp. capers, drained and rinsed
Pinch of sugar
2 tbsp. fresh basil chopped
Salt and pepper to taste
1 ball of fresh burrata cheese, 8 oz.
2 slices of Sprouted Wheat Sourdough bread, toasted
Directions:
In a small bowl, combine cherry tomatoes, chopped garlic, olive oil, capers, a pinch of sugar, and basil. Season well with salt and pepper. Allow for the mixture to marinate for 5 minutes, as the tomatoes will release their flavorful juices.
Toast 2 Sprouted Wheat Sourdough slices until crisp. Spread on a layer of burrata and top with the tomato mixture. Serve immediately.
