Kimchi & Fried Egg Open-Faced Sandwich with Sesame & Scallions
Known as a staple condiment in Korea, Kimchi has become a household favorite worldwide! With its probiotic properties, it not only delicious but healthy too. A fried egg and a drizzle of sesame oil provides the perfect richness and earthy flavor, making this toast extravagant yet simple.
Serves 1
Ingredients:
1 slice of Sprouted Multigrain Bread, toasted
1 pastured egg
½ tsp. butter
2 Tbsp. kimchi, thinly sliced
¼ tsp. sesame oil
1 scallion, sliced on the bias, green portions only
1 pinch of black sesame seeds
For the fried egg:
In a small, non-stick pan on medium heat, melt butter and gently place egg in pan. Cover and let cook for 2+ minutes or until white and yolk are set.
To assemble:
Place the fried egg on toasted bread, sprinkle with the kimchi and drizzle with sesame oil. Top with sliced scallions & sesame seeds and enjoy warm.
