Prep time: 15 minutes | Cook time: 8 minutes
2 slices Sprouted Flax & Chia Bread
3 tbsp mayo
1 tsp Dijon mustard
1 tsp honey
2 tbsp chopped celery
2 tbsp chopped red onion
¼ tbsp white vinegar
Salt & pepper to taste
Toast bread and place aside. Boil eggs for around 7-8 minutes. Then let them sit for 5 minutes before cutting open.
Place the remaining ingredients in a small bowl and mix together. Cut eggs into chunks and add them on top of the bread. Then drizzle with the desired amount of the mayo mixture. Top with cilantro and pickled onions if desired
