Rainbow Carrot and Harissa Hummus Toast

Harissa is a spicy, smoky hot pepper paste used in Tunisian cuisine. It can be found in grocery stores in jars or tubes. Here we add it to homemade hummus for a kick, feel free to add more or less to your liking. The sweetness of the carrots and the spiciness of the harissa hummus is a unique and healthy surprise. The hummus can be prepared 2 days in advance and the extra can be served with fresh vegetables and crackers.

 

Serves 2 with extra hummus

 

Ingredients for harissa hummus:

1 can garbanzo beans, rinsed and drained

¼ cup tahini

2 cloves garlic

Juice and zest of 1 lemon

½ tsp ground cumin

1-2 tbsp harissa

2-3 tbsp water


3 medium rainbow carrots, sliced thin

Fresh torn mint, 4-6 leaves

2 tsp. extra virgin olive oil

2 slices Sprouted Flax & Chia Bread, toasted


To make harissa hummus, place garbanzos, tahini, garlic, lemon, cumin, harissa and water in a food processor. Blend until smooth, add more water if hummus seems too thick or add more tahini if you prefer a thicker mix. Season with salt and pepper to taste. Toss carrot slices with the olive oil, mint and season with salt to taste. Spread the harissa hummus on toasted Sprouted Flax & Chia Bread slices. Top with the carrots, taking the time to create playful patterns if you have the inclination.
